Snooze originally opened in 2006 in Denver by two brothers with a passion for culinary experimentation and gourmet breakfast food. Today, you can find their delicious classics and exciting innovations in neighborhoods across Colorado, California, Arizona and Texas—and right here in Fort Collins! Their Bravocado Toast does not disappoint. It is made with rustic toasted bread, topped with smashed avocado, red onion honey jam, roasted tomato, olive oil and two cage-free sunny side up eggs. It is served with a side of Dijon citronette, spiced pepita and parmesan-dressed greens.

The Butterfly Café name pays homage to the historical significance of the Butterfly Building in the heart of Old Town. Here, they serve coffee and a variety of food items, including soups, salads, sandwiches, and of course, avocado toast! Theirs is vegan, made with a few simple ingredients: avocado, hemp hearts and spices. No matter what you order here, it is made with  mostly locally sourced and non-additive ingredients!

Complement your coffee or latte with a bite to eat at Mugs Coffee Lounge. And they have plenty to choose from, whether you want a sweet pastry or a savory breakfast sandwich. Their seasonal toast is a delicious avocado toast — made with avocado, hummus, golden beets and pickled onion sprouts, all drizzled with balsamic. 

 

Called “the coziest café in Fort Collins,” Café Bluebird is situated in the Laurel Street Station across from CSU. Although it has many locations throughout the country, including two right here in Fort Collins and others in the region, First Watch feels like your hometown diner — with a modern, fresh twist. Their Crab & Avocado Toast is especially fresh, made with wild caught blue crab and smashed avocado on top of their whole grain artisan toast, with house-pickled red onions, olive oil, fresh herbs and Maldon sea salt. Plus, it is served with two cage-free basted eggs.

One of our favorite meals here is their breakfast, which offers a simple menu with both savory and sweet options, including avocado toast. It is made with smashed avocado, fried butternut squash, power slaw and cranberries, all piled on top of sourdough bread. You may also add an egg or bacon for an additional charge!
